Blueberry Muffins

Nutritious breakfast that includes protein that your children will love!

Ingredients
  1. 2/1/2 cups ground almonds (almond flour)
  2. 3 eggs
  3. 1/4 cup water
  4. 2 tablespoon Coconut Oil
  5. 1 teaspoon vanilla
  6. 2 cups blueberries (fresh or frozen)
  7. 2 teaspoon cinnamon
  8. 1/2 teaspoon baking soda
  9. 1/4 teaspoon salt
  10. 2/3 cup honey (unpasteurized)
Instructions
  1. Heat oven to 325F
  2. Line regular muffin tin with large baking cups.
  3. Melt virgin coconut oil in small pan on stove and cool to room temp.
  4. Combine wet ingredients (eggs, honey, blueberries, water, vanilla, and coconut oil in a large mixing bowl.
  5. Combine dry ingredients (almond flour, baking soda, salt, cinnamon) in a small bowl.
  6. Mix dry ingredients thoroughly into the wet ingredients.
  7. Fill baking cups evenly with batter.
  8. Bake for 25 minutes or longer.
  9. Cool and enjoy!
