Gluten Free Dairy Free Blueberry Muffins

Ingredients
- 2/1/2 cups ground almonds (almond flour)
- 3 eggs
- 1/4 cup water
- 2 tablespoon Coconut Oil
- 1 teaspoon vanilla
- 2 cups blueberries (fresh or frozen)
- 2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup honey (unpasteurized)
Instructions
- Heat oven to 325F
- Line regular muffin tin with large baking cups.
- Melt virgin coconut oil in small pan on stove and cool to room temp.
- Combine wet ingredients (eggs, honey, blueberries, water, vanilla, and coconut oil in a large mixing bowl.
- Combine dry ingredients (almond flour, baking soda, salt, cinnamon) in a small bowl.
- Mix dry ingredients thoroughly into the wet ingredients.
- Fill baking cups evenly with batter.
- Bake for 25 minutes or longer.
- Cool and enjoy!
